This was a great base recipe for enchiladas. To spice up the beef, I added 1/2 pkg of onion soup mix, 4 tsp of chilli powder, a tsp of cumin as the beef was cooking. I didn't have time to wrap every individual enchilada, so I just layered the 9x13 pan with corn tortillas, 1/2 of beef mixture, 1/2 of sauce... then did that again. Cooked as they suggested for same amount of time and the family loved it!!

Wow! This was so good, my kids are from Haiti and they totally loved this dish! I just added 1 more cup of rice to compensate for the plenty chicken broth. Also substituted the hot madras curry powder for the coriander, etc like someone else suggested - awesome! I will definately be making this over and over again.
