Beef Enchiladas
This was a great base recipe for enchiladas. To spice up the beef, I added 1/2 pkg of onion soup mix, 4 tsp of chilli powder, a tsp of cumin as the beef was cooking. I didn't have time to wrap every individual enchilada, so I just layered the 9x13 pan with corn tortillas, 1/2 of beef mixture, 1/2 of sauce... then did that again. Cooked as they suggested for same amount of time and the family loved it!!
