Balsamic-Glazed Salmon Fillets

This was really good and tasty! I did use extra white wine since we both love the added flavor. I have used this recipe twice and am excited to use it again! We always buy the wild Alaskan salmon...tastes best to us.

Gourmet Mushroom Risotto

This is a wonderful recipe. I've made it twice now. It does take some time and patience, but the end result is well worth the wait. I left out the portobello mushrooms and cut down a little bit on the white mushrooms. I used onion instead of shallots. I used about 3 and 1/2 cups of chicken broth, and 3 cups of white wine because I love using wine for cooking. I will make this again and again.

Golden Potato Soup

I must have done something wrong. We usually really like potato soup, or anything with potatoes, but this was bland and had a grainy texture. I did leave out the ham and celery, but I don't think that those would have made a huge difference. Probably won't make this recipe again.

Pigs in a Blanket

This was pretty good. We weren't going to be making a whole lot of these and I didn't want to spend the extra money for mini weiners, so we just bought hot dogs and cut them in half. They were pretty good, but next time I think I'd skip the cheese. Couldn't taste the cheese at all, and it leaked and made a mess of the cookie sheet!

Irish Eggs

This was a good heavy breakfast that I made when we were up in the Boundary Waters for a weekend of fishing. I added some extra red and green peppers and about 1/2 an onion, chopped. I did cook the potatoes for a little bit before adding the other ingredients. I didn't want the potatoes to be crunchy/uncooked. Topped with a bit of cheese and some pepper, and it was delish!

Brooklyn Girl's Penne Arrabiata

I made this pretty close to how the recipe was written (lots of times I add or subtract ingredients according to my own preferences). I did not bread the chicken, as I was trying to keep this pretty healthy. We thought it was really tasty. Next time, I think I would add another can of tomatoes. Usually I would much rather have fresh tomatoes and stay away from canned, but not this time. They gave the sauce good flavor and texture. I will probably make this again sometime.

Mexican Chicken Corn Chowder

I added a can of mexi corn and shredded the chicken. I also subbed half and half for heavy cream since that's what I had on hand and I wanted to get rid of it. The chowder tasted pretty good, but it didn't seem very healthy, despite all the veggies I put in there. I also had to add quite a bit of hot sauce to give it some kick. Overall, it was decent. I probably won't make it again anytime soon, though.

Portuguese Chicken I

This was really tasty, but next time I will double the sauce because that was the best part. Delish! Could go with rice or potatoes, using sauce as a gravy.

Chicken Fiesta Salad

Decadent Raspberry Brownies

I used about 1 1/2 cups of sugar, and that was about right. These were VERY rich, especially with the thick frosting on top, but a nice thing to have on the dessert table with all the light fluffy cakes and whatnot. I put these on a tray with raspberries scattered around the brownies and filled the middle section with raspberries, too.

Cucumber Sandwiches III

I think that this is the best summer snack there is. It's very refreshing! My mom has always made these with pumpernickel rye cocktail bread, so I did the same. Other than that, I pretty much followed the recipe. YUM!

Fruit Pizza III

I used Pillsbury sugar cookie dough and rolled it out and cut into a rectangle on a piece of tin foil on a cookie sheet(easy removal of cookie). I let it get light/medium brown in the oven, and cut into serving-sized squares before hardened. After it cooled, I mixed Cool Whip and some vanilla extract with an 8oz block of softened cream cheese and spread that on the giant cookie. Allrecipes was down, so I had to improvise a bit with the topping, but it was still good. I made a square of blueberries, and then alternated the red stripes with strawberries, raspberries, and maraschino cherries(stems plucked out). The only thing I'd do differently besides the topping next time would be to make it the day I was serving. It got a little bit soggy overnight, but still went over big at our family 4th of July celebration!

Slow Cooker Beef Stroganoff I

This just didn't taste like beef stroganoff. The meat tasted good, and it was a good consistency (added an extra can of soup), but I have tried other recipes for this that were much more to my liking, and I won't be using this one again.

Sloppy Joes II

I added some BBQ sauce to the mixture and omitted the brown sugar. I ended up adding quite a bit more ketchup than the recipe calls for because it seemed really dry. The final result was very tasty, we both enjoyed our meal.

Tender Barbecued Chicken

We have made this at least 2 or 3 times now in the past few months. I usually add a little extra coke and bbq sauce, and omit the lemon slices. It is perfect for long work days, it is so easy and great to have ready when I walk in the door. It is so tender and juicy, it just falls right off the bone. Next time, I will add some extra onion because we always fight over the onion chunks.

Hot Corn Dip

The only thing I liked about this recipe was the corn. I made it because it seemed like a variation of another corn dip recipe I make, but it didn't even compare. I won't be making this again. It lacked flavor (spice) and the texture wasn't to my liking. I'll continue making my old corn dip recipe.

Delicious Ham and Potato Soup

I don't like celery, so I left that out. Otherwise, I made the recipe exactly as I read it, and it turned out GREAT! The best part was how simple it was to make. I think it took me all of 45 minutes to prepare/cook/serve. I'll be making this again soon!

Grilled Delmonico Steaks

I loved how simple this was to measure out real quick and throw in the blender. I marinaded the steaks overnight with this mixture, and grilled for dinner the next day. It's one of the first times I have actually wanted to eat my steak without any sauce or anything...it was fantastic!! We will be using this recipe for our steaks again, soon!
