Zucchini Pasta II

I'm rating four stars because I made a lot of changes to this depending on what I had, but it came out soooo good! I used two boneless skinless chicken breasts sauteed in olive oil with salt, pepper, and garlic powder. Then sauteed the onion, garlic, and zucchini with salt, pepper, dried oregano and basil dried red pepper flakes,and garlic powder. Added some diced tomatoes with juice and chicken broth, some flour to thicken it and let it simmer. Served over pasta shells! Delish!! My husband said it was restaurant quality.

Lana's Sweet and Sour Meatballs

I would give the meatballs five stars- they were sooo good! Probably the best I've ever tasted. I didn't have eggs so I used mayo instead, it came out perfect. However, I did not care for the sauce. I used crushed pineapple instead of chunks, maybe that's why? I also omitted the peppers. I found the sauce to be wayyy too sweet. I will definitely make these meatballs again though, but with a different sauce.

Banana Crumb Muffins

OMG! I can't say enough about this recipe! I usually am not the world's greatest baker, I always manage to mess things up, but these came out picture perfect and I didn't even do everything according to the recipe! I only had one large banana, so I halved the recipe, used a tablespoon less sugar, margarine instead of butter, and added vanilla. This made exactly 6 perfect muffins. The muffin part is exactly sweet enough and the topping adds just a bit more sweetness. Thank you so much!

Strawberry and Feta Salad

I made this salad twice, both times it was great but the second time was AMAZING! Both time I did the same thing with the dressing- used half red wine vinegar and half raspberry dressing instead of raspberry vinegar, and apple cider vinegar instead of balsamic,and used olive oil, kept everything else the same. Delicious dressing. For the salad, the first time I just used strawberries and feta and added some red onion which I think is a must. It was great. The second time, I added a can of mandarin oranges, and used mostly spinach because I ran out of romaine and it was amazing!!! I even served the feta on the side in case people didn't want it and it was great without it.

Hearty Vegetable Lasagna

This was pretty good, not the best I ever had, but my guests seemed to enjoy it, I made a huge pan and it got almost finished. I used ready bake noodles,left out the pepper,added fresh spinach to the ricotta and added broccoli and zucchini to the sauce. I did feel that there was a bit too much cheese on top.

Chicken Fiesta Salad

This was sooo yummy! My husband and I both loved it! I made a few changes. I used 2 chicken breast halves cut into strips and used a different fajita recipe from a cookbook. 1 tablespoon lemon juice (because I didn't have lime) 1 teaspoon soy sauce, 1 tablespoon garlic powder, 1/2 tablespoon brown sugar, and 1 tablespoon taco seasoning. Mixed it all together and cooked for a few min. on the skillet. Then removed the chicken, added the beans, corn, salsa, and some more taco seasoning. For the salad I used red onion and added some avocado. I also made a dressing using mayo, vinegar, parsley, dill, salt, pepper, onion and garlic powder. Layered the bean mixture on the salad, the chicken on top of that, and you have an absolutely delicious meal!

Honey Baked Chicken II

I've made this recipe twice, once with the curry, once without. Do not leave out the curry! It makes such a difference. The first time it was amazing!! Everyone could not stop raving, even my difficult to please brother. The second time it was still delicious, but no raves. The curry really adds something special.

Strawberry Spinach Salad I

I made this salad for a big dinner, and it was gone after a few minutes! I added mandarin oranges and red onion, and used pecans instead of almonds. I also didn't have any poppy seeds, so I left them out. The dressing was good, but I wasn't a big fan of all those sesame seeds, next time I'd leave them out.

Baked Teriyaki Chicken

I used 4 boneless, skinless chicken breasts, added some chopped peppers, mushrooms and onions to the pan, doubled the sauce, and poured it over. The chicken was tender and delicious. However, I felt that the ginger taste was too strong, and we like a sweeter sauce. Next time we'll add more sugar and less ginger.

Strawberry Angel Food Dessert

I made this for our 6 month anniversary. It looked very pretty in the trifle glasses. It tasted all right, but next time I'd leave the cream cheese out. I used real whipped cream and I think that with a little sugar added would be a much better topping. I'd also switch the strawberry and cream layers.

Harvest Salad

I was expecting great things from this salad with all the positive reviews, but it really didn't do anything for me. I didn't have avocado and my husband hates cranberries so I left those out, and also added some cucumber. The salad itself was fine, especially the roasted walnuts, but I did not like the dressing at all. Maybe it was the jam I used. My husband said he liked it but I think he just didn't want to make me feel bad :)

Salmon in Lemon-Dill Sauce

I made this for our 6 month anniversary dinner, even though my husband isn't so into salmon because I had some salmon i needed to use and I wanted to make something light. Let's just say he finished his plate! We both loved it! I baked the salmon and then served it over pasta with the sauce. I followed recipe to a T besides for using garlic and a only a Tbls of butter added at the end. The sauce was VERY oily so I added some more milk and it ended up fine! Thank you so much for this delicious recipe!

Becca's Taco Soup

So good! I made a huge pot and my husband and I (mostly him) managed to finish the entire thing. He could just not get enough! I made a few changes according to what I had in the house- used diced tomatoes in juice instead of tomato sauce, and chicken broth instead of tomato juice- we like thick soups so I didn't use a lot. Also, we only had cream style corn so I used that and it was fine. I used a whole packet of taco seasoning and also added garlic, salt, pepper, and cumin. We didn't have tortilla chips so we ate it with heated up tacos! Was delicious!

Baked Salmon II

This was so delicious! I made it for my husband's grandmother's birthday party and everyone loved it! I used half butter, half olive oil as suggested by other reviewers and it came out perfect. My husband's aunt even asked for the recipe! Thank you so much.
