About this Cook
I'm a 23 year old single mom from south Arkansas. I love to cook. I grew up in my grandmother's kitchen and on her hip I learned lots of traditional recipes and as I grew up adapted those to my taste and preference. I also love LOVE LoVe Food Network. I can almost taste the things they are cooking sometimes!...and I'm notorious for taking their recipes to heart and switching things up a bit to make something super delicious for myself and my family!
My favorite things to cook
Southern, Lo Country, Italian, American-italian, Tex-Mex, Chinese, anything that sounds good!
My favorite family cooking traditions
My grandmother made the best stewed squash and mashed potatoes. I've tried a million times but I still can't get it right! Sticky rice - it's taken years to perfect that, too, and it's always different every time I make it! Home grown peas and green beans and potatoes... yum!! Never buy ready-made cookie dough (my brother and his friends <3 that).
My cooking triumphs
The first time I made homemade lasagna. I thought the noodles wouldn't be done and it would be cold in the middle but it was delicious!! I've varied the recipe a lot since then from chicken with white sauce to all veggie and different kinds of cheeses and veggies and meats along the way. My first batch of buttermilk biscuts - I won't ever forget the look on my husband's face. They were to die for! Homemade cinnamon rolls - why do people make such a fuss over yeast dough?? It's not that big of a deal! Love the crock pot and how easy it is to dump things in it in the morning and it's done and tender and warm and ready for me when I get home from work so I can spend time with my beautiful son!
My cooking tragedies
I haven't ever really messed anything up that I can remember... I try my hardest to pay the best and closest attention I can when I'm cooking.

Florida Strawberry Muffins
These muffins were alright. The muffins are very dense. They were a little dry and not very sweet. This recipe needs adjusting a bit.

BREAKSTONE'S Chicken and Sour Cream Enchiladas
These enchiladas are wonderful and very easy. I cheat and buy a rotisserie chicken from the store, skin and debone and shred it. And I use mild salsa. They're great reheated, too. The flavor is pretty mild so my son tolerates them well.

BREAKSTONE'S Creamy Banana-Sour Cream Cake
The flavor on this cake was not good AT ALL. And I followed the recipe exactly to directions. The sour cream makes it too sour. Maybe sweeter, more ripe bananas would fix this problem. But I was not impressed.
