Beef Tenderloin With Roasted Shallots

We had this for company and they loved it!! It was delicious, flavorful and the meat is very tender. The sauce is really good! It's best to use shallots, because they tend to have a much milder taste than onions and a meat thermometer..so you can gauge just how well done you want your meat.

Cincinnati Chili I

This recipe is great! All the spices blend together to make one very flavorful dish. The only change was I added a bit more cheese. It is better than Skyline Chili!! Jane
