Angela's Awesome Enchiladas

Not quick and not easy, but worth the effort! My wife had a hankering for Enchiladas and loved these. . . . One of the few real five star recipes. . . Stores well & great left overs. Here's a first, I did not change or add anything, can you believe it. This one is well thought out for the average palate. We lived in the Southwest states for many years and loved the cooking. Thank you Angela for a taste of the Southwest.

Chuck's Favorite Mac and Cheese

Quick and Easy! My wife loves it. I halved it, mixed in a cup of milk and replaced the bread crumbs with crushed corn flakes. Move it up a rack for the last ten minutes to add more color to the topping. Things you can add: ham, peas, onion or tomato sauce. Don't tell my wife but I did add a little more cheese then it called for.

Brown Sugar Meatloaf

Thanks Tangastar Quick and Easy just the way I like them. My wife liked it also. I use a meat loaf pan with a lift out. I first line the pan with aluminum foil covering the lift out. Then once baked I just poke a couple of holes in the foil to dry out the meat. Then use the remaining sauce with a little flour for a quick gravy.

Beef Stew VI

Thanks Paula, I'm a stew guy so I really enjoyed this. My wife also loved it. I added a couple of mint leaves when served just to give it a local spin. It's clearly a 5 star.

Salmon Patties II

Please Del thank your Dad for me. This is quick and easy. My wife loved it. I will be using this for tuna like others have done. I don't like bread crumbs so I used corn flakes.

Grilled Salmon I

Thanks Tinamenina, Quick and easy. My wife loved it. I used a little of the sauce to coat the fry pan which added even more flavor. I'm going to try this on other types of fish fillets.

Rhubarb Crunch

Thanks Carolyn great receipt! Quick and easy and my wife loved it. I used the left over rhubarb from the pies and doubled the crumble. Moved to the top rack of the oven to darken the crumble. This also freezes well.

Fresh Rhubarb Pie

Quick and easy! You gave us a winner here Carol. On the second success using this recipe I raised my rating to 5 stars from 4. This baby is a 5 star taste treat. My wife & the Dominican Sisters down the street loved the unique taste of this pie. I think I'll spend a little more time reading the other reviews they're great for picking up some pointers. Maybe someone has a suggestion on how to thickness of the sauce that the rhubarb produces.

Indian Carrots, Peas and Potatoes

Thanks MTORRES3. Quick and Easy! I halved it. This goes great with a plain baked chicken or turkey. Cook this to add something to spice up the a normal plain meal. Increase/decrease the spice to match your families taste. I served this to my wife and guests they all loved it.

Sweet Potatoes 'n' Pears

Quick and easy! Should be in all family kitchen cook books. My wife loves it. I halved everything and puréed the pears. Heated them in the micro for 1 minute then mixed all. The second time you make this adjust the brown sugar up/down to match your local or national sweet potato. If its yellow you've used sweet potatoes if its orange they're yams and need less brown sugar. The photo is miss leading.

Thanks Mikazuki. Quick and easy. Great for sandwiches the next day. This is a easy fast meal when friends pop in and you need something that never fails. Goes well with sweet potatoes, & a peas/carrot combo. My wife loved it.

My wife loved it! Quick and easy. No buttermilk here so combined 1 tablespoon of white vinegar to 1 cup of milk and 5 minutes later, presto buttermilk.

Thanks Liza. This is a keeper for the quick and easy. I read all the reviews and found them very helpful. Added 1/2 cup of water, soaked the dry onion soup and reduced the cooking time as the reviews suggested. My wife loved it.

Incredibly Cheesy Turkey Meatloaf

Thanks Brooke, Wonderful and easy. Read all the reviews and added their suggestions. I used pork/turkey mixed 50/50. Substituted corn flakes in place of bread crumbs. Added 1/2 cup of green and red bell peppers for a little more color and flavor. Cut the salt to 1/2 teaspoon. Served with peas and sweet potatoes. No cheddar here so replaced that with normal white sliced white sandwich cheese but I think any good cheese will do. Anything that can be made into a sandwich the next day has to be great. My wife loved it.
