Tofu Parmigiana
I enjoyed this immensely. The great thing with the tofu it takes on the flavor of whatever you cook it with. But I would definitely bake the tofu and fry it. The texture is a lot more crisp.

Roasted Asparagus with Herbes de Provence
I loved this recipe. I didn't have the herbes de provence-so just substituted herbs. 12 minutes is absolutely perfect. Try it-you will be having asparagus a couples nights a week with this.
