Black Bean, Corn, and Tomato Salad with Feta Cheese
We made this tonight for a quick vegetarian dinner and it was delicious. Substituted daikon for jimica since we happened to have one in the fridge and skipped the jalapeno but otherwise we stayed true to the recipe and really enjoyed it. Will definitely make it again.

Chinese Lemon Chicken
I loved this recipe! I've been looking for an easy lemon chicken recipe and this is the one. We used lemon juice instead of lemon, and accidentally used lemon jello mix instead of pudding mix. It was terrifically sweet - just like restaurants - you could leave out a little of the sugar I think. Served with steamed broccoli, it was an easy dish for Sunday night. I highly recommend it if you like lemon chicken!

Pork Tenderloin with Creamy Herb Sauce
My teenager, who hates when I try new recipes, actually liked this. Hurray! It really took only 45 minutes from start to sit-down as the recipe states. I didn't add wine (didn't have any) and used skim milk instead of cream because it's all I had. I used fresh basil and parsley instead of dried. The sauce, though thin as you would expect, was delicious! The fresh herbs were very flavourful and the carrot base is so great. Thank you for a quick, easy, and tasty tenderloin recipe! I'll definitely make this again.
