Thai Pumpkin Soup
This soup is perfect the way it is. The only thing you should be aware of is the lemon grass strings. The fibers will be extremely annoying unless you A. Strain them before adding the pumpkin B. Put them in a metal loose tea bag so that they don't mix with the soup, but still seep out the flavor. I will be making this soup a lot and it works great with nutmeg pumpkins if you have those in your area.

Spicy Vegan Potato Curry
If you can't find garam masala, don't worry. It is a mix of spices and you probably have some already. You can google the contents and use whatever you have. I only had cinnamon and pepper so I used them and it still came out tasting great. My husband doesn't like peas so I used carrots and it was excellent. Thank you for this recipe, I will add it to my favorites!
