My favorite things to cook
My husband is in charge of BBQ. My favorite stuff to cook is Italian. You can cook/bake a little or a lot of Italian, and everybody likes it.
My favorite family cooking traditions
HAH....frozen fish sticks and Kraft macaroni and cheese. I've urged my kids (a lot older now) to go beyond that...LOL.
My cooking triumphs
I wish I were, but I'm not Ina Garten. I cook every day, and my husband likes the simple meals (especially casseroles) that I prepare. As long as he's satisfied, then I am triumphant.
My cooking tragedies
not many, thank goodness.

Hot Baked Fruit
This is incredible! I took it to a luncheon for my girlfriends, and they all raved about it. I used sugar free pie filling, but it had just the right amount of sweetness.

Chicken Gravy Enchilada Casserole
I made this for 4 servings. I oven baked the chicken breasts ahead of time. Since the chicken was already cooked, I put all the ingredients in the frying pan and simmered it for 15 minutes. I also added 3/4 cup of raw rice while simmering. After arranging all ingredients in the baking dish, I covered it and baked it for 35 minutes, uncovered it and let it bake for another 15 minutes. Adding the rice really helped it from being too soupy.
