PHILADELPHIA Key Lime Cheesecake

This was delish! Added more lime juice and zest than called for (I zested and juiced about 8 key limes) and added in about two drops of green food coloring to make the color pop a bit. Had it on Thanksgiving after dinner and the whole family gobbled it up! A nice tip is to throw it in the freezer for 45 to an hour before cutting it. You get perfect slices and the cake is nice and firm!

Pomegranate Molasses

Great and easy recipe! I only used a fourth of the ingredients to make just enough to flavor some cream cheese icing I was making and give it some color! Had a little bit left over and used it on some grilled chicken and it was great!

Fresh Asparagus Risotto

This was totally delicious! I love risotto so much was tired of making the boxed kind. I switched the broth and water like some suggested and used veg broth to try and make it a bit healthier =) Even my picky family totally dug this! I made a batch that I'm going to bring over to a get-together tomorrow and reheat in the oven. I know they'll love it!

Baked Acorn Squash with Apricot Preserves

This was excellent! I microwaved the squash cut-side down for about 10-ish minutes instead of baking it in the water. I don't think it compromised the flavor and it was done so much faster. Plus, added about 1/2 tbs more of the apricot preserves to the butter/preserves mixture! It was so yummy! I'll definitely be making this again!

Stuffed Mushrooms III

I took some of the reviewers advice and pre-baked the mushrooms a bit before to draw out some of the liquid. I also added some diced tomatoes, grated asaigo cheese, seasoned bread crumbs and some roasted garlic to the stuffing mix to try and balance out the overpowering ricotta flavor other people mentioned, but the ricotta still dominated these mushrooms. I took another reviewers advice and baked them in a shallow bath of red wine, which added a little kick to them =) They were good, but I think I'll try them with cream cheese next time.

Lemon Chicken Tenders

Okay, this was pretty darn amazing! I'm house sitting right now and trying to just use food that's in the fridge/pantry/freezer to make meals and noticed I had some chicken breasts and large bottle of lemon juice. So why not make some lemon chicken? I found this recipe and thought it looked yummy, so I gave it a try. IT WAS AMAZING!!! I did make a few changes to the sauce though. I reduced the amount of sugar to about 3 tbs, took out the curry entirely, added 2 tbs of corn starch, 1/8 cup of water, 1/8 tsp ground mustard, 1/2 tbs of paprika and 1 tsp cayenne pepper to give it a little heat! I invited some friends over to eat with me and the chicken was gone in a FLASH! I'm printing this out and it's going in my recipe book for sure!

Four Egg Yellow Cake

Oh my gosh! This cake was sooooooooo good... My friend and I used this recipe to make a theme cake for a co-worker's birthday and the parts that we had to trim off to get the cake shape we wanted were instantly devoured. I substituted butter for the shortening and got such a moist, spongy cake... Everyone at work and home said it was probably the best yellow cake they've ever had! It was great with cream cheese icing.

Strawberry Cupcakes

The cupcakes had a great flavor and everyone at work and home loved them with the cream cheese icing I used on them, but they were a bit thick. I only used 5 tablespoons of butter, 1/2 cup and 2 tablespoons of milk, 2 teaspoons of baking powder a whole cup of finely chopped strawberries and three lightly beaten egg whites. Again, very delicious but not as light and fluffy as I'd wanted.

Apple Strudel Muffins

Very yummy! My family loved these after I added some of the tweaks from other reviewers. Added 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, 1 1/2 shredded apples and 1 1/2 finely chopped apples. Peeling, cutting and shredding the apples was the worst part of the recipe. It took quite a while, but it was definitely worth it. Also used unbleached flour and raw organic sugar. I'll definitely be making these again.

Waffles II

This is such a great recipe! I used half wheat flour and half unbleached all-purpose, added 3 tablespoons of sugar, 2 teaspoons of vanilla and 2 cups of finely chopped strawberries and they turned out wonderfully! Stored well in the refrigerator and was able to get waffles for three days out of this recipe.
