About this Cook
My name is Ty and I've been cooking since I was a little boy. I was always fascinated by the goings-on in the kitchen and would bug my parents to teach me how to do what they were doing. As I've gotten older, I tend to branch out more than my parents ever have; trying exciting new recipes, buying kind of off the wall cook books, watching cooking shows almost obsessively... I just love being in the kitchen and experimenting with food.
My favorite things to cook
I love to bake. Cooking anything is fun, but put a cake pan or some muffin tins in front of me and I just get excited =)
My favorite family cooking traditions
I love all the baking tips I've gotten from my grandparents who are some of the best bakers EVER and the patience I've learned from my mother, who makes the best northern-style chili you will ever eat!
My cooking triumphs
I love to entertain and make tapas for parties. I think some of my greatest triumphs have been snack foods for parties and conventions ranging from Mediterranean shrimp croustinis to heart healthy blackberry mini-muffins =)
My cooking tragedies
Fondant. I have never been able to really get fondant down. I can usually make it alright, but something always goes wrong when I'm trying to use it. I'm very much a perfectionist, so when it doesn't look JUST RIGHT, it bugs me =P

Fresh Asparagus Risotto
This was totally delicious! I love risotto so much was tired of making the boxed kind. I switched the broth and water like some suggested and used veg broth to try and make it a bit healthier =) Even my picky family totally dug this! I made a batch that I'm going to bring over to a get-together tomorrow and reheat in the oven. I know they'll love it!

Baked Acorn Squash with Apricot Preserves
This was excellent! I microwaved the squash cut-side down for about 10-ish minutes instead of baking it in the water. I don't think it compromised the flavor and it was done so much faster. Plus, added about 1/2 tbs more of the apricot preserves to the butter/preserves mixture! It was so yummy! I'll definitely be making this again!

Stuffed Mushrooms III
I took some of the reviewers advice and pre-baked the mushrooms a bit before to draw out some of the liquid. I also added some diced tomatoes, grated asaigo cheese, seasoned bread crumbs and some roasted garlic to the stuffing mix to try and balance out the overpowering ricotta flavor other people mentioned, but the ricotta still dominated these mushrooms. I took another reviewers advice and baked them in a shallow bath of red wine, which added a little kick to them =) They were good, but I think I'll try them with cream cheese next time.
