Grilled Salmon I

This recipe is incredible. It is simple and tasty. I didn't grill my salmon. I made individual parchment packets and baked at 400 for 15 mins then turned the oven off and let it sit in the hot oven for 5 mins. When I served the salmon in the packets. I just cut open the parchment packets. My family loved it including the picky 3 yr old.

Skillet Pork Chops with Potatoes and Onion

Was a wonderful simple recipe. My only problem was that it was REALLY salty. Like other reviewers have said I would omit the salt the next time i make it and allow the broth to salt the dish.

Beth's Spicy Oatmeal Raisin Cookies

This is a flawless recipe. Like other users I didn't use shortening and used all butter instead. I also used more Vanilla than the recipe called for and because i love the taste of chocolate and raisens I used chocolate covered raisens. My husband and kids loved it!

Tzatziki Sauce

What the recipe doesn't tell you is that you have to strain the water from the yogurt or you can use sour cream. I used sour cream. I also strained some of the water out of the cucumber. Watch the lemon as it can make the sauce too liquidy. The first time I made it I followed the recipe to a tee. It was a soupy mess. I made some adjustments and the recipe tunred out great.

Bourbon Chicken

I didn't give it 5 stars. Because I made it 3 times until I got the flavor i was really looking for. I partically like the "Mall" bourbon chicken. It is a great recipe to us as a base. These are some of my changes. I used chicken thighs instead of chicken breast. I seasoned the thichs with seasoning salt. I used 1/4 cup of lite soy sauce and 1/2 cup of chicken broth. I felt the recipe had a strong soy sauce flavor the first time I made it. I used fresh ginger and garlic. I used 3/4 cup of brown sugar. I used half of the marniade mixure as a marinade.I marnidaed the chicke for a couple of hours then threw it on the grill. The other half I simmered it to cook out the alcohol. Once the chicken was cooked I placed in a dish and topped the cooked chicken with the sauce. The taste is superb!

Heavenly Chocolate Mousse

FABULOUS!!!!! I made this mousse as part of a filling for a cake. I did do some things a little different. When melting the chocolate instead of using all water I used 1/8 Kahlua and 1/8 water which I placed in a ceramic bowl with the butter.I put the bowl into the microwave for about 1.5-2 min. I then place the chocolate in the hot liquid mixture and let it sit for about 2 min. This made it easy to melt the chocolate with out placing it back into the microwave. I don't have a candy thermometer, so I whisk egg yolks, sugar and remaining water in the sauce pan and then placed it over a med-low heat whisking it continuously until I reached the uniform yellow consistency" like another reviewer had mentioned. Good LUCK!!!!

Homemade Black Bean Veggie Burgers

This is an AWESOME recipe. I didn't find it to be to dry as said in some of the other reviews. However I did do some things differently. I used my food processor. I put in my garlic, onion and I used frozen pepper stir fry (red, yellow, green pepper slices and onion slices- you can find them in the freezer section at the grocery) and a little cilantro. I blended that together first. Then I added everything else. I didn't use hot sauce. I blended all the ingredients until they were all well incorporated. I then baked them a 400 degrees 15 min on each side. They were a hit!

Chicken Pot Pie IX

This recipe was exactly what I was looking for. I made some changes. I boiled chicken breast on the bone with some seasoning salt, celery, onion, carrots and used the liquid as the chicken broth. Cooking the chicken breast still on the bone gave the broth great flavor. I then rmoved the chicken from the pot and let it cool and pulled the chicken off of the bone. I later strained the broth and added the frozen veggies to the pot to cook then them a little before assembly. The frozen veggies I used were a half of cup of corn, green beans, carrots, and peas. I also used Half & Half instead of regular milk. I used 1 stick of butter. When adding the liquids to the cooked flour and onions I used equal parts of Half and half and broth. It is important to cook the flour in order to avoid that floury taste. I also mixed everything together before placing in the pie crust. My version is probably not as healty but it was excellant!

Janet's Chicken Casserole

I love this recipe. However I have made some changes to simplifiy it. For example I place the chicken and sauce mixure on the bottom. I omitted the alomond and mixed the stuffing and broth in a bowl ahead of time and then placed it over the chicken mixture. I is absolutely Delicious!
