Honey Baked Chicken II
I topped with honey roasted sliced almonds for the last 10 minutes - looks great and it's delicious! Serve with couscous for a different, easy and healthy side dish. Foil line your dish for easier clean up.

Three Cheese Garlic Scalloped Potatoes
Slice the potatoes thin for more even baking. You will need to bake them for at least as long as it says, and even more doesn't hurt. I wasn't ready with the rest of the meal when the timer beeped, so I just left them in (another 1/2 hour) and they were just right. A few of the thicker ones could have been cooked longer. The provolone on top is absolutely fantastic. I don't know what they mean by 4 slices. I bought a brick of provolone and sliced it up and just covered the top.

Chocolate and Fruit Trifle
I've made this twice and both times it was a hit (even though the second time I was beating the pudding and it wasn't thickening before I realized it wasn't instant but the cooked kind). Still used it because I was didn't have time to change it - it didn't look as pretty, but it tasted great. I used strawberries, blueberries and fresh picked raspberries - I looked so pretty. I didn't add the orange juice, but thought it tasted great anyways. The custard like layer is awesome. I may try drizzling chocolate liqueur over the cake next time (when I'm not serving it to kids!)
