Eggplant -- Easy, Good and Tasty
It was pretty good. I didn't measure the parm. or the italian dressing & I put too mush dressing. Overall it was good.

Eggplant Supper Soup
I LOVED this!! This recipe makes a lot of food but it was gone in one day! There were 6 people, and I wanted more! I'm making it for dinner again tonight.

Eggplant and Mushrooms with Wild Rice
We have 6 adults in our house and we all LOVED this recipe! It is a little heavy w/ the cream, but it's worth it.
