About this Cook
After I retired from my teaching job, I was able to try new recipes on a more regular basis. I consider cooking a relaxing hobby and I welcome criticism, positive and negative. Family members are my favorite judges, my husband and adult sons in particular.

Making use of all leftovers..casseroles, salads, pasta meals, sandwiches are wonderful creations made with assorted leftovers.
My cooking triumphs
Appetizers at holiday gatherings. I always bring something new and something tried and true. I try to make them takeaways....not always a dip that requires a cracker or crudite to enjoy.
My cooking tragedies
Veggie casseroles. Seems like the broccoli, cauliflower, brussel sprout mixtures end up too mushy and the flavor of the vegetables get lost. I've had about a dozen tragedies in this category, so I try to stick to plain and simple veggies, with a drizzle of butter or olive oil instead of sauces and soupy toppings.

Crustless Spinach Quiche
Excellent and easy. Might try chopped broccoli next time as one reviewer suggested. Add whatever spices or extra flavors to suit individual tastes, but it makes a nice meatless dinner as well as a breakfast. Good with canned mushrooms and just about any kind of cheese. This will become one of my 'regulars'.

Eddie's Special Burgers
While the burgers with topping are good, they have been on this website since 2003 according to the reviews. Please tempt us with something really "new and improved".

Nicole's Tailgate Party Chicken Salad
The addition of hard boiled eggs makes this an interesting chicken salad. This chicken salad works well as an appetizer dip/spread with sturdy crackers or as an entre because it is a great sandwich filling. I am a fan of seasoned mayo as my 'adhesive' of choice instead of Miracle Whip Pesto,dill, or roasted red pepper add a nice flavor to mayonaisse and both work well in this salad. I skipped the croutons and didn't miss them.
