Eggplant Parmesan II
I really impressed my friends with this one! I only used two eggplant and it was plenty. Baked them for 15 minutes per side and sprayed them with a little Pam to get browned. Great meal!!

Mom's Zucchini Bread
My first attempt at bread and it was a success! Since I only have one loaf pan I put the extra batter in muffin tins. They took half the time to bake and it all turned out great! I used the crumb topping and it really added flavor and texture. Will definitely make again!

Cookie Salad II
This is such a hit everytime I bring it to a BBQ. My 15 year old son especially loves it!
