Chuck's Favorite Mac and Cheese
Great macaroni and cheese, none of that processed junk. A good base recipe but excellent for adding your own twist. I cooked up some bacon and sauteed some leeks with a couple chipotle peppers. Turned out great.

Very good recipe but watch out for the amounts of spices. An entire head of garlic? Seems like an obvious error, but those who suggest a single clove are using too little. I prefer a bolder taste. I used four cloves of garlic, also added an extra tablespoon of lemon juice, and a tablespoon or so of fresh chopped dill. This provides a much bolder flavor; the base recipe is quite mild by my standard. I have found that the "name brand" plain yogurt tends to be less runny than the generic store brand and is more cost effective than greek yogurt.

Vegan-Friendly Falafel
End product is pretty good but there are some major problems with the amounts of ingredients called for. The garbanzos, potato, and onion makes a huge amount of falafel but the recipe only calls for 1 tsp. of cumin? I quadrupled the amount of cumin and doubled most of the other spices (except the salt; it was plenty). Also doubled the flour and added bread crumbs and it was still quite loose. I baked though, and the end product consistency was good. Would probably be four stars otherwise, but as is the recipe has flaws that must be addressed when making.
