Spinach Stuffed Chicken Breasts

A hit at home; everyone loved it. Served with basmati rice and mustard/brown-sugar carrots. Found I had a lot of left-over spinach filling though...wouldn't all fit in the breasts.

Orange Chicken Stir Fry

Too much cocoa flavour for me; although could be using a poor quality powder. Imagine it makes a difference, considering the amount that goes into it. Didn't really satisfy a chocolate cake craving either; felt more like chocolate fudge than chocolate cake.

Alaska Salmon Bake with Pecan Crunch Coating

Nice flavour; easy to prepare. Children enjoyed brushing honey mixture on salmon and then sprinkling pecans. May try with candied pecans next time.

Brown Sugar Pie I

Substituted one cup of brown sugar for one cup of maple sugar but it didn't set. Likely should have thrown a little flour into the mix. Still though; made a good (if messy) treat.

Lebanese-Style Red Lentil Soup

Tasty, easy, kept well in fridge but did need a little water added the next day. Didn't change a thing in the recipe and likely wouldn't. Served with naan bread; complimented it nicely.

Fresh Ginger Cookies

Excellent! A little less molassas next time, maybe, but a very good and super-easy cookie. Resisted the temptation to flatten the raw cookies with a fork and am glad I did. Cookies flattened nicely on their own, creating attractive little cracked-tops.
