Spicy Indian Chicken and Mango Curry
This is an easy and superb-tasting recipe. The most difficult part is prepping the mangoes. I usually don't deviate from the recipe the first time I use it but time was short and I had no shallots. I have small boys and a parent that can get small kids to try shallots deserves a medal. Anyway, the outcome depends a bit on the quality if curry used. I used a mild blend that my boys will eat. When cooking for just the wife and I, I use a more "Flavorful" blend. I learned long ago that "Medium" to a native Thai is insanely hot to me. I tend not to use anything more than "Mild" when shopping in Asian specialty stores. I've varied the vegetables with this recipe depending on what I can pick from my garden. The recipe is good enough to stand a fair amount of variance without compromising it. I give it 5 stars because of the ease of prep and consistent high quality despite my best efforts to vary the ingredients and proportions.

Good Old Fashioned Pancakes
Superior basic pancake recipe. The melted butter versus veg oil results in a better taste and texture. Also, the recipe is solid enough to allow small variations without harming the end result. I've found vanilla and orange zest adds some complexity for my more snooty extended family members. A family favorite in the unaltered form.
