Chai Tea Mix

I've made this several times to rave reviews. Even did a "blind taste test" to compare to Oregon Chai's instant mix. This came out better. One suggestion: mix in a blender at 1 1/2 cup at a time. For whatever reason it does not get as messy as just 1 cup.

Belle and Chron's Spinach and Mushroom Quiche

The best quiche I have had! Based on previous recipes of quiche that I have used, I reduced the amount of spinach and mushrooms to 1 cup, and the amount of cream to only 1 cup as well. I've used this recipe over and over, and it always works. Substituting sliced green onions is delicious as well. If you live in a high elevation area like me you will need to increase the oven temperature to 425 Degrees.

Almond Coconut Chocolate Cake

After reading all of the reviews, I also reduced the sugar to 2 cups and the butter to 1/4 cup. Still extremely sweet. I didn't have large marshmallows, so I substituted 1/2 package of mini-marshmallows. I also poured about a quarter of the cake batter into a 4 inch terra cotta pot and used some of the coconut filling and chocolate frosting to give as a gift to a friend. Even with the reduced amounts, the 9x13 pan was close to overflowing. Excellent cake though!

Amber's Devils on Horseback

Excellent dish! And totally lowfat with only 3 grams of fat. I used the leftover scallops in a pasta dish with diced tomatoes, olives, chopped spinach and a little olive oil. It was delicious the 2nd time around too!

Curry Pumpkin Soup

I had my doubts about this soup. I mean, pumpkin and curry??? But, boy was it yummy! I added the onions as suggested and it added a great flavor. I'm definitely going to keep this recipe and make it over and over!

Creamy Cajun Shrimp Pasta

Very tasty and spicy! Next time I will use a little less cajun seasoning - probably only 1 tbsp. To avoid the "flour taste" as one reviewer had, add more butter or margarine to cook the flour. I added some snap peas to the dish for more color. Definitely a keeper recipe!
