Beezie's Black Bean Soup
I LOVE this recipe. I have made it at least 10 times, never the same twice! I use canned black beans, substituting the liquid from the cans for part of the water. This causes the soup to be thick and full of flavor. I have found that the end product is delicious served like a chili, on wheat noodles or rice, with cheese on top, and that it is delicious spicy or not spicy, using two green peppers or one hot pepper and one green. Thank you for submitting this delicious, healthy meal!

Shrimp Couscous Salad
This salad is phenomenal. I've made it multiple times for different groups of people and everyone loves it. The one improvement I've made is to add some fresh cilantro in addition to the parsley-- it goes really well with the other flavors. Thanks for a great recipe!

Vegan Mexican Stew
I scaled this recipe up and made it for 60 hungry college students at my church. It was the favorite dinner yet this year! Then I just had to make it for my family, who also greatly enjoyed the flavor! Excellent recipe! Just the right level of spice-- not too hot, still very flavorful!
