Barbequed Marinated Flank Steak
Pretty good marinade, I did tweek it a little. I used chinese cooking wine rather than vinegar and added about a teaspoon of chili garlic paste. Didn't make it too hot (i was a little worried!), kids didn't even know it was there but I could taste the flavor not the heat. Also, I only marinated for about 6 hrs, that was plenty.

Quick Turkey Casserole
This was a pretty good meal. I changed a few things though: I added salt, not sugar to the onions. Then, I didn't have corn flakes so I used crushed Town House crackers. Also, I didn't have any cream cheese so I used 4 little "Laughing Cow" garlic & herb light cheese spread. Lastly, I put this in the oven at 350 for 30 minutes. The kids didn't care for it though but they aren't casserole eaters to begin with.

Mexican Chicken I
Wow was this good! I tweaked this a little: I had a half a packet of taco seasoning that need to get used up so I used that rather than the seasoning listed. That gave it a good flavor without being too spicy for the kids. I had 2 very large chicken breasts so I filleted them and that reduced the cooking time to about 1/2 hour. I also added a small cup of pineapple tidbits w/ a little of the juice. This was so good served with Vigo saffron rice, a little sour cream on top garnished with chopped green onions. My 6 yr old loved it but picked off the beans and my 3 year wouldn't touch it. The leftovers made a great lunch today!
