Apple Pumpkin Muffins
Awesome recipe! Perhaps I should try with less sugar, but these are so incredibly yummy as is, I hate to mess with such a good thing!

Chicken Enchiladas with Creamy Green Chile Sauce
Good sauce on top. This is best if recipe is followed to a T. Second time I took some shortcuts (didn't fry tortillas) and it was good, but not as good as original recipe.

Cajun Crawfish and Shrimp Etouffe
This was my first attempt at anything cajun, and the results were delicious! I doubled the shrimp for lack of crawfish and it was super tasty!
