Heather's Cilantro, Black Bean, and Corn Salsa
I just made this tonight and my husband who was "full" just had to have a bowl full of chips and salsa. I did not use avocado because I wanted it to last longer. I also added a jalapeno and used extra lime. Great recipes to start with and adjust to your taste preferences. I would half the recipes...this made quite a bit!

Simple Garlic and Basil Pesto
Pretty good base...but I used just pine nuts, omitted the chili powder as many reviewers suggested, and added a splash of lemon and garlic salt. My husband likes strong flavors...I thought the lemon was a nice addition.

Spicy Black Bean Empanadas
This is so delicious! I followed the recipe exactly and although laborious, totally worth it. After I baked them, I stored them in the refrigerator. When I wanted to reheat them, I microwaved for 30 seconds, popped them in the toaster oven, and the puff pastry puffed and crisped very nicely. I have made a few times since and just put the filling in tortillas. I have also substituted refried beans for the meat and it was quite tasty! Thanks for the lovely recipe. My husband was skeptical...but now says "I've never had a good empanada until now."
