Addictive Sweet Potato Burritos
Yum! I followed the suggestions of the other reviews and used black beans, roasted the sweet potatos on a baking sheet in the oven, added cilantro, rice and bell pepper, and Newman's Own pineapple salsa. Instead of mashing anything, I put half the recipe in the food processor pulsed it a few times, and left the rest chunky. I also omitted the water.
