Fabulous! I made this on Sun and have had it for lunch everyday since (this was the 5th day). It made a huge batch so I froze some and took a container out today just so I could have it for lunch, again, today and tomorrow. I made a large green salad and homemade bread to go with it. My husband loved it as well. Normally, he only eats soup once but he took it to work for two meals and commented on how great it was left over. I didn't add the lemon juice and only needed about 4 cups of the broth. I added some arugula and squash that I need to use up.
