Red Lentil Curry
I just made this for the first time. The author is right--it IS an easy recipe to make, even though there are a lot of ingredients. And the taste is just heavenly. I can't believe I haven't thought to make my own curry before. If you're a vegetarian or vegan, or if you're just looking for ways to incorporate more vegetarian food into your life, you could do a lot worse than this recipe. Be ready to drop a chunk of change to buy the spices if you don't already have them in your cabinet, but again, those spices will keep, and you can use them in all sorts of different dishes. Thank you for this great recipe!

Mom's Buttercream Frosting
Fabulous! Soft, creamy, and not sugar-coma-inducing. I'm not all that experienced at making frosting, but this came together very easily. I substituted another half-cup of butter for the vegetable shortening and used confectioners' sugar rather than granulated. I ended up adding maybe a quarter-cup more sugar (if that) in small increments until the frosting tasted "just right" to me. Excellent, will use this recipe again!
