Spent too many years eating the wrong foods and too much of them. Am now working hard to repair damage done, that my years left are as healthy as possible.
My favorite things to cook
Soups---Chicken wild rice is a favorite. Split pea and lentil soup is another.
Healthy stir fry with tons of veggies.
My favorite family cooking traditions
For many years, comfort foods ruled. I loved cooking it and eating it. Too much! That brought me to the point at age 51 that a change was not just needed but imperative, healthwise. Since Jan 5, 2009, I've turned over a new leaf. After trying in 2004 and giving up, and adding on another 30 pounds, this time it's for good. Already I feel so much better, physically and mentally, even spiritually as well. I've put food in its proper place...under God, under my family's importance...you're getting the picture. So now, my new tradition is using variety in cooking healthily. Having so much fun, searching out new recipes, tweaking them to make them more healthy and to my tastes. Hubby loves this, as we rate each new dish over dinner and decide whether or not we like it, if it need less of this, more of that, etc.
My cooking triumphs
Learning to cook without potatoes!! Grew up eating them at almost every meal and developed a huge addiction to them; giving them up has been my biggest achievement to date. Just knowing that anytime I want one, I can have it helps me not to want them.
My cooking tragedies
Beginning June 2004, our family went on a new plan of eating together. For 100 days following, I made completely new foods---healthy ones. I didn't repeat any entree during those days, made 100 new ones. One dish....what my family now calls Oriental Delight was a total flop. We all four HATED that dish!! I made it correctly it's just that none of us liked the combined flavors. Funny thing is---my hubby didn't want to admit he didn't like it at all so didn't say anything at dinner that night. Hence, he had a nice healthy portion in his lunchbox for the next 3 days!! Finally....he asked if the Oriental Delight was all gone and admitted throwing it out at work and eating out of the vending machines those days!!! Poor guy :o(
