About this Cook
Currently, I'm a second grade teacher at an English school in Honduras. The small community of "North Americans" affords many occacions for me to cook or bake for a group. In my spare time I read, write lessons, travel and experiment with yeast breads.
My favorite things to cook
I love to bake anything. Yeast bread, quick bread, pie, tarts, etc. I also enjoy experimenting with meatless dishes, although I am not a strict vegetarian.
My favorite family cooking traditions
Cooking traditions in my family were eat in front of the TV and hope Mom doesn't make you do the dishes. As us kids have gotten older we've forged our own traditions but something we share as a family is campgrounds cooking! Dad hangs a suspended grilling rack over the fire and we make relatively normal food but share great memories cooking over the fire.
My cooking triumphs
Forgetting to half a recipe for cinnamon rolls which ended up feeding nearly the entire teaching staff at my school. The challenge was in my inherited teacher's housing, I only have two bread pans, one 9x9x2 baking pan a pie pan, and a cookie sheet to speak of. So making upwards of 50 some cinnamon rolls of no modest size was a slight challenge. Although I did make a lot of new friends that day. :-)
My cooking tragedies
Although most anything I try for the first time comes out decent or at least editble, I cannot make blondie brownies to save my life. I don't understand it... I can make cinnamon rolls and fresh fruit pies that my friends and I have enjoyed... but a simple stir and pour brownie... nothing doing. However, I can make chocolate ones. It doesn't make any sense. Also the first time I made a tart I used rice as a pie weight and didn't use tin foil to protect the crust... yeah. I use marbles now.

The Best Banana Bread
This is a great basic banana quick bread recipe. I followed Krista's suggestions (except the rum... but that sounds great!). I also added 1.5 cups pecans and 2 tsp. vanilla and made muffins instead of the loaf. This yielded 1.5 dozen muffins. Thanks for the great recipe and the fabulous suggestions.

Michael's Foccacia Bread
I made this for my best friend's 30th Birthday dinner party and it was a wonderful addition to the potluck meal. It's wonderful fresh or the next day sliced for sandwiches. I didn't put the Tbs. of salt on top because that seemed like an aweful lot to me. Once accounting for that this is a 5 star recipe for ease and deliciousness :-)

GG's Bulgur Salad
Really light and yummy. I've been looking for ways to get more whole grains into my family members and this did the trick. My dad called it "vulgar wheat" before he tried it but was singing a different tune by the end of it. Super easy to make. The dressing was a little sweet but paired really well with a more savory entre. Next time I will cut down the sweet a little bit. Thanks a lot for this new summer favorite!
