Soft Oatmeal Cookies

Reviewed: May 30, 2009
Very soft & flavorful cookie! I added 2 tsp. of cinnamon and 1 tsp. of nutmeg since my husband LOVES cinnamon and I baked them for only 7 minutes. They came out perfectly soft and stayed soft & chewy long after they cooled. My son also wanted to dust the cookie balls with a cinnamon & sugar mixture after he added blue food coloring to them for fun and they still tasted awesome...SWEET, but awesome nonetheless!!

Irish Boxty

Reviewed: Mar. 17, 2009
This was my first time making Boxty and it came out great! I elected to spice things up a bit more than the original recipe called for by adding some finely chopped green onions & garlic. I served them with some homemade honey-dijon sauce which was really good and I paired the Boxty with some oven-baked tilapia that I found the recipe for on Allrecipes.com...it was a wonderful St. Patty's Day dinner!!

Grandmas Fresh Apple Cake

Reviewed: Mar. 17, 2009
This cake was a GREAT low-fat recipe that satisfies the sweet-tooth (especially for my Mother who has been trying to watch her weight lately). The cake came out more the consistency and texture of a heavy loaf bread rather than a light & fluffy cake, but it was still very moist and very tasty (I doubled the recipe & used a bundt pan). My Mother raved about it and asked for the recipe to hand out at work!

Blonde Brownies I

Reviewed: Mar. 14, 2009
This was my first time making blonde brownies and we had to alter it a bit due to not having choc chips in the house. I added about 1/2 c. peanut butter chips & 1/2 c. butterscotch chips and then I sprinkled the top with what I had left of some toffee bits (about 1/2 c.). I baked them in a 9 x 9 pan for about 25 mins and they were AMAZING!!! The peanut butter & butterscotch chips tasted great blended together & the toffee chips gave them a nice chewy topping. I will definately make these again!
