Chocolate Crinkles II

These are so delicious- like mini fudge brownies! I stuck the dough in the freezer for 45 minutes and it was a breeze to work with. These are very easy and I think they would look beautiful on a Christmas tray.

Rice and Lentil Soup in a Jar

I've been trying out soup mixes to make for Christmas gifts- I made this one tonight and knew I'd found my winner. I used red lentils, but instead of the green ones I used split peas. Also, I added 2 Tbs. of dried chopped onion. If you don't have poultry seasoning, you can make your own (I do) using one tablespoon each of the following: sage, marjoram, rosemary, celery seed and thyme. Thank you so much for this recipe- OUTSTANDING!

Easy OREO Truffles

My sons are crazy about these. I use almond bark instead of baking chocolate. I dip half in chocolate bark and half in white- then I drizzle the opposite color on top of them. They look very fancy and taste delicious.

Slow Cooker Lentil and Ham Soup

This soup is very tasty. The best part is that you get to use up whatever veggies you've been saving in your freezer from leftovers. I added rice and it was phenomenal. Thank you for the recipe!

Salisbury Steak

The steaks themselves are good, but the sauce is kind of awful. I made this again and for the sauce used onion soup mix, water, cream of mushroom and some fresh mushrooms sauteed in EVOO and it was very, very good. Not healthy, but good comfort food.

Non-Edible Cinnamon Ornaments

I've made these for years using just applesauce and cinnamon. There's just no need for the other spices or glue- the ornaments are perfect without them. Roll them out thick so they don't crack, and if you're air-drying, gently turn them twice a day so they don't warp. Perfect kid-friendly craft!

Cowboy Oatmeal Cookies

To say that this is a good cookie is like saying a Rolls Royce is a nice car. While the statement is true enough, it really doesn't do it justice. These cookies knocked my socks off and every other oatmeal cookie I've ever had is tasteless crud in comparison. P.S. Thanks to other reviewers who came before me, I added a healthy splash of vanilla and an extra cup of oatmeal. I'm glad I did.

Favorite Old Fashioned Gingerbread

Lots of people keep saying this is dry- it's because of the butter. Try making it without butter and instead using 1/4 c. vegetable oil and 1/4 applesauce. It is delicious and very moist this way. If you have apple butter on hand, that's an even better option than applesauce.

Green Chile Chicken Stew

This seems like a lot of seasoning, but it was perfectly flavorful. I have to admit- I went a little crazy with this recipe: added a can of black beans, a can of cream of mushroom and then topped each bowl with some diced avocado and sour cream. I served it with buttered tortillas and it was out of this world!

Pumpkin Butter

This is a very easy, tasty recipe. The only change I made was to use fresh pureed pumpkin instead of canned. The cloves are a little overwhelming- next time I will halve them- otherwise this was pure perfection. Thank you for the recipe!

Apple Cake V

I didn't use any oil- I used half unsweetened applesauce and half homemade apple butter instead. This cut out lots of fat and added tons of flavor. The spices from the apple butter add a delicious touch. Thank you for the recipe!

Pesto Cheesy Chicken Rolls

This is delicious and so easy if you cheat like I do =) I used store bought pesto and I didn't roll the chicken up or even flatten it. I just put the pesto and cheese on top of each breast and it was fantastic. Thank you for the recipe!

Chicken Cordon Bleu Casserole

I skipped the breading and frying part. I just stir-fried the chicken and then tossed it in with the ham and cheese. I halved the milk and added half cup sour cream. This was very good served over rice.

Pumpkin Bars I

I'm giving this a four because I think it's a good starting point. The first time I made it, I followed the recipe exactly and had pumpkin cake, which I wasn't thrilled about. The next time I made it, I halved the powder and soda, used a little less sugar, subbed half the oil for apple butter and doubled the pumpkin. The second batch is to die for. They're dense and moist and delicious. Both times I made them, I used one 9 x 13 and one 11 x 7 pan.

Pumpkin Bar Icing

This is a very tasty icing. You can add more cream cheese or more powdered sugar depending on your tastes. This also works well if you melt the butter and cream cheese and then drizzle over bars or cookies.

Baklava

This is the best dessert I have ever made. Everything about it, from the phyllo to the honey sauce, is so delicate. I used almonds and ground them almost to a powder. I also made one and a half times the sauce. This is good beyond words.
