Cowboy Oatmeal Cookies
To say that this is a good cookie is like saying a Rolls Royce is a nice car. While the statement is true enough, it really doesn't do it justice. These cookies knocked my socks off and every other oatmeal cookie I've ever had is tasteless crud in comparison. P.S. Thanks to other reviewers who came before me, I added a healthy splash of vanilla and an extra cup of oatmeal. I'm glad I did.

Favorite Old Fashioned Gingerbread
Lots of people keep saying this is dry- it's because of the butter. Try making it without butter and instead using 1/4 c. vegetable oil and 1/4 applesauce. It is delicious and very moist this way. If you have apple butter on hand, that's an even better option than applesauce.

Green Chile Chicken Stew
This seems like a lot of seasoning, but it was perfectly flavorful. I have to admit- I went a little crazy with this recipe: added a can of black beans, a can of cream of mushroom and then topped each bowl with some diced avocado and sour cream. I served it with buttered tortillas and it was out of this world!
