Easy Arugula Salad
Very good salad. I used mixed greens instead of just arugula and shredded parmesan instead of grated. I also added dried cranberries and toasted the pine nuts as suggested by others. Place the avocados on right before serving to keep fresh. *To toast pine nuts put them in a non stick fry pan dry (no oil). Cook on medium-low and shake to mix every 30 seconds or so. They are done when light brown. Place on a plate to cool.

White Chocolate Cranberry Granola Bars
These were so good! I made the recipe pretty much as is except omitted the nuts and added a bit more rice cereal to make up for it. I also used pancake syrup as I don’t really like the taste of pure maple syrup and that worked just fine. I pressed the bars down halfway through cooking and baked them until the edges of the pan started to brown up a little (about 20 mins). Everybody loves these and I will definitely be making them again!

Vegetarian Chili
This is a great mild chili for those who don't like things too hot. I only used 1 small zucchini but added 1 small green pepper, chopped, and one can of corn, drained. I used diced tomatoes instead of crushed. Also, I sauteed the onions and 3 minced cloves of garlic (omitted the garlic powder) before hand. I used 2 cups of water and cooked for an hour per other posters' suggestions. YUM! Even with the added water it is still a little thick but I like my chili that way, if you don't I would add more water.
