I'm not generally a big meatloaf fan, but this is delicious! I was running a little low on salsa so I added a small can of chopped green chilis for volume. After cooking we topped with more salsa - it was so yummy! I'm going to make it again tonight, this time I think I'll add some chopped jalapenos :)
