I am a firefighter in Texas who has taken an interest in various styles of cooking to shake up the menu the station.
My favorite things to cook
Currently I enjoy making ethnic dishes from various countries and regions of the US. Those meals that typically are associated with a purely restaurant experience and that people do not realize are quite easy to make at home.
My favorite family cooking traditions
The Southern Sunday Meal and our Thanksgiving Meals (my family hits both sets of parents for Thanksgiving. LOADS of food!). My wife and I love going to both of our parents' places on Thanksgiving and enjoying a traditional American meal and a loaded British dinner table. We also love hitting a friend's place on Sundays and doing a huge dinner in the Southern Tradition after Church.
My cooking triumphs
My lieutenant and I decided we were tired of eating the same dishes at the station and planned out some more "exotic" fare for our coworkers. We managed to make Sliders, Meatball Po' Boys, Korma Curry (with chicken), a delicious Orzo dish with shrimp, a hearty Gumbo, and 3 different kinds of chili.
My cooking tragedies
My first batch of sliders came out like hockey pucks on a non-stick pan (Teflon is terrible). I also tried to fry a turkey for the first time a few years ago and it hadn't fully defrosted after 2 days in a fridge... The oil eruption was AMAZING. Last, but not least, I completely burned the bottom half-inch of a batch of chili because the spoon I was using was too flexible and didn't mix up the bottom.
