Blackened Chicken

Pretty good. It was spicy but we did 4x what the recipe called for because we had a lot of chicken. This was easy, fast, and low calorie! Smoked up the apartment, but worth it.

Easy Spicy Chicken and Rice

I put Pillsbury croissant dough on top for the last 15-20 minutes of cooking. It was cooked and crispy on top but kinda mushy on the bottom but it was reaaalllly good! I also added onions, mushrooms, shredded cheddar cheese, and a dollop of sour cream to the medium bowl mix step. SO good!!!!!!!!!!!! I didn't have any crunchy rice problems, but I did use instant rice.

Flavorful Beef Stir-Fry

I found the recipe to be very salty. HOWEVER this could be because I doubled the sauce mixture, as suggested by many reviewers. Apple juice may combat the saltyness better, I used white wine. My boyfriend thought it was fine but I had to add sugar on top, which sounds weird, but it made it really tasty. We also added yellow, red, and green peppers, yellow onion, about 1 tablespoon ginger, sesame seeds, bean sprouts and three hand-fulls of of unsalted cashews (which also added some sweetness against the salty.) BE CAREFUL CHEWING THIS MEAL! It may be because we used fresh sugar snap pea pods and not frozen, but I literally choked two times trying to eat. I love them but they are very stringy and the meat isn’t so easy to chew either (we used fresh stir-fry beef which I also choked on.)

Roasted Asparagus and Mushrooms

5 stars with about 2 table spoons of lemon juice sprinkled on top of the asparagus and mushrooms before roasting. Also I roasted some yellow onion. :)))) The rosemary, lemon juice, and salt has a party in your mouth! This will be a staple side dish at our home! SO EASY!!!

Braised Balsamic Chicken

Fantastic! We wish we would have NOT used chicken stock to muddle the flavor of the vinegar. We didn't use mushrooms but it was still divine!!!!! Awesome!

It was very tasty...very soft. We also put in the vegetables at the halfway mark and added flour to the final broth to make it thicker for some rice gravy. delicious!

VERY GOOD! I didn't prepare them over a camp fire, I just cooked them the way the recipe states. Very good with a little bit of soy sauce! Will be a staple at our house!

Cajun Chicken

I doubled the amount of flour mixture..it didnt seem like it would be enough for the amount of chicken we had...and turns out doubling it was just right. It was a bit spicy for my taste so maybe next time I'll keep the pepper to the original amount. This was very easy and smelled divine while cooking. I added onions and green peppers to the chicken while cooking which my boyfriend agreed was a nice touch. The nuts were also a pleasant surprise but made the dish a bit heavy on the stomach. We had a good amount left over which was great. Worth the effort!

Orzo with Chicken and Artichokes

Felt as if it was missing something, a creaminess maybe. The red pepper flakes added a nice heat and the wine gave it a touch of class. Next time I prepare it I will leave out the bacon, it was hard to find and I wasn't sure if I was cooking it all the way through. My boyfriend liked it and I did too but I felt like something was missing.
