Chicken Marsala Florentine
This was SOOOOOO good! We used 3/4 cup Marsala and 1/4 cup sherry. Also used more sun dried tomatoes, baby bellas, and 1/2 bag of spinach. Will probably saute some diced onions with this the next time. Served over garlic mashed potatoes. Even yummier the next day for leftovers since the sauce soaked into the potatoes.

Taco Pie
For a healthier version I used ground turkey, reduced sodium taco seasoning, lowfat sour cream, lowfat shredded Mexican cheese and reduced fat crescent rolls. Sauteed a small diced onion with the meat. Added 1/2 can drained/rinsed black beans and 1/2 can drained/rinsed white corn to the meat along with only 1/2 of the sour cream mixed in. I also only used 1/3 to 1/2 of the chips. This turned out to be very quick and tasty topped with tomatoes, lettuce, and salsa. I will add some hot salsa to the meat and allow to cook down next time for a bit more spice.
