Cauliflower Casserole
After making a few of my own "healthier" changes, this gets 5 stars from me!! I have been trying to eat healthy so every recipe I give an overhaul. On this dish I used margerine instead of butter (next time I am going to try using a broth), whole wheat breadcrumbs and garlic salt and reduced fat cheeses and lessened the amount. Unlike some other reviewers I made a thin layer of the cauliflower and cheeses then poured the margerine and breadcrumbs on that. I use less ingredients and it gurantees a nice crispy crunch in each bite. Will definetley be making again! Thanks!

Gina's Lemon Pepper Chicken
If your on a diet or looking for something simple and light this is a recipe for you! I found it to be extremely easy but if you don't pair it with something flavorful, your dish will be pretty bland. I think next time I will cook the chicken as directed and chop it up to put on a salad.

Apple and Orange Chicken
I was a little weary of this recipe at first because of the variety of ingredients but it turned out alright. I personally think this would be better as a marinade and then put on the grill. I think it would bring out the flavors nicely.
