It Twas a Wee Bit Fatty Dontcha Know

Yesterday was St. Patrick's Day. Naturally being a good Irish Lass I made corned beef for dinner. I thought I'd include my recipe here
1. Buy corned beef. This requires a trip to Boston. Apparently the corned beef here in Toronto is different, as in is very fatty. I did not travel to Boston yesteday to get my corned beef, in fact, I walked down the street to score it. Hence it was an overpriced piece of fatty tissue
2. Put corned beef in a pot of water with a good amount of pickling spice. Don't ask me what pickling spice is because I have no idea. All I know is that it is a bunch of spices (including mustard seed) all packaged up and labeled "Pickling Spice." Let water come to a boil and then simmer the hell out of it. ("the hell" is usually out in about 3 hours.)
3. Serve with potatoes. Most Irish people will make plain boiled potatoes because they are usually hammered by dinner time and don't care if the food has any taste at all - they are just putting something in their stomach so they can continue drinking until the wee hours of the morning. I am not one of those kind of Irish people. I am of the I Like My Food To Have Some Taste Thankyouverymuch Variety of Irish people so I make mashed potatoes with salt and pepper, a little milk and a good amount of butter.
4. Serve with cabbage. I don't use cabbage for the same reason that I don't make plain boiled potatoes. I make brussel sprouts or "little cabbages" as my kids called them. Again, don't forget the butter and salt
5. Serve with some sort of tasty topping/sauce, like for instance I made an avocado mustard garlic sauce so that I could actually tolerate this tasteless overly fatty Irish fare. Here's the recipe in case you too do not wish to maintain an all night buzz just so that you don't have to accept the fact that the food of your people sucks.
Throw all these things in the food processor
Avocado
Dijon mustard
2 cloves garlic
a little mango (fresh or frozen)
olive oil
Press on button. Wait 4 seconds and press off button. Smother the lousy fatty cut of corned beef with this sauce while you plan to mail order your flat lean cut corned beef from Boston next year
