Simple Baked Apples

a good, simple recipe. we used fiji apples for a crisp and tart dish, subsituted granola with cranberries for raising and walnuts, used skim milk, topped with butter and brown sugar before baking, and covered with foil.

Pumpkin Black Bean Soup

so good! you really do not notice the pumpkin, except that something is a bit different than the black bean soup you are used to eating. we made the changes that a lot of reviews suggested: only pureed 1 can of beans to leave it a little chunkier, used diced tomatoes with chiles to spicy it up, no ham & veggie broth, used apple cidar vinegar, added cumin, a bay leaf, and red pepper flakes, and served with lite sour cream and green onions. great recipe that even the boys can love!

oh my gosh, delicious cookies! and i know cookies. i would suggest slightly less butter and molasses. also, do not push down the cookies much to leave them fluffy.

very good mac & cheese! you can absolutely change it to your taste. we used lite cottage cheese and sour cream, added milk, and cut the bread crumbs to 1/2 cup. second time around, we added capers and tomatoes to change it up a bit. always delicious.

Jalapeno Popper Spread

a great game-day dish! i used lite cream cheese, mayo, and sour cream, which no one noticed. i also doubled the green chilies for more flavor. sprinkle bread crumbs on top and bake in the oven for a bit of crunch. the fellas loved this!

Tapenade

excellent tapenade! because i like "chunkier" dips, i chopped everything instead of using a blender. it turned out very well. make sure you rinse the anchovy fillets very well to decrease the salt. i also used half black olives and half kalmata olives to add extra color and a new flavor. a great recipe!

Slow-Cooker Chicken Tortilla Soup

very good tortilla soup! as other suggested, i put the chicken in raw and let it cook with the soup. with about an hour to go, i shredded the chicken and added cooked brown rice - a must. served with lime juice, chopped avacados, green onions, cilantro, cheddar, and sour cream. my fiance loved it!

Fruited Curry Chicken Salad

a very good new and different chicken salad. i used half light sour cream and half light mayo, left out the celery (as i very much dislike celery), and added a few soy nuts for extra crunch. even my meat & potatoes fiance liked it!

Chicken Spaghetti II

Delicious! My fiance loved it. A few changes I made: 1.) 13 oz spaghetti 2.) 3/4 lb cheese 3.) add a can of milk 4.) add green chilis (we like spicey!) After warming everything in the pot, I covered the spaghetti with bread crumbs and baked at 375 for 15 minutes. Definitely will make again!

German Chocolate Cake Frosting II

my first attempt at german chocolate cake frosting and it was delicious. as others stated, i added cornstarch to help thicken. it took considerably longer to thicken than i would have though. in fact, i thought i had burned it. but it was perfect!

Coconut-Cream Cheese Frosting

So very delicious! Followed the recipe almost exactly - added extra powdered sugar to get to a buttercream-like consistency for a round cake. Used a white cake and sprinkled the middle and top with shredded coconut and chocolate flakes. Huge hit!

Stuffed Hot Peppers

so very delicious! in our awful oklahoma grocery stores, the best i could find were bell peppers and jalapenos. the seeded jalapenos were perfect, adding a little spice and were a good size. i also used parmesan cheese and sprinkled a little on top before baking, to add more crispiness. the hot sausage was perfect. thanks!
