Bran Flax Muffins
Awesome muffins. Healthy, full of fiber and all good things! I make a batch of these every week. Last week, I made them with all pumpkin. I fully replaced the applesauce, apples, carrots and raisins with the entire 14 oz can of pumpkin puree. I also throw in some chocolate chips for fun not health! I used 1/2 cup of brown sugar and 1/2 cup of honey with good results. I omitted the oil completely. Finally, I used all wheat flour. This is a fun, easy and versatile recipe.

Easy, Cheesy Zucchini Bake
I should of followed the other reviewers suggestions and pre-cooked the zucchini. After oven baking, the dish had a lot of liquid. I made this with reduced fat cheese. Other than the extra liquid, this zucchini dish was very good. I will make it again.

Marie's Easy Slow Cooker Pot Roast
My husband is the meat eater in the house. He really enjoyed the pot roast and said it was tender and tasty. Personally, I was very discouraged by the chuck roast as it had so much fat. Obviously, I have little knowledge of the different cuts of beef. I knew that chuck roast was fatty but I was very surprised and a bit disgusted at the amount of fat that rose to the top after being refrigerated. I skimmed off the fat and cut off as much as possible. I won't make this again due to the amount of fat, not the taste or recipe as that was all good.
