Blueberry Sour Cream Coffee Cake

I made this exactly per the instructions, and it turned out beautifully!! The recipe notes that frozen blueberries require more cook time, and they weren't kidding. I cooked it for an extra 30 minutes with frozen blueberries. I brought it to work almost two weeks ago and I still have at least 1 person a day ask me to make it again. I have had 3 people say it is "the best" cake they have ever had! I plan to make this all the time.

Vegetarian Shepherd's Pie

I love curry, eggplant, mashed potatoes and Parmesan. Unfortunately, even with the extreme amounts of curry powder and cumin, this was really bland. I had to add a bunch of Costa Rican Salsa Lizano to make it enjoyable.

I should have added a lot more garlic, but instead followed the instructions by the letter. The result was pretty bland. I'm sure with more garlic it would have been much better.

Zucchini Pie

I'm not a huge fan of either eggs or zucchini, but I had a bunch of both to use up. I love, love, love this!!! I used gruyere instead of parmesan because I had a bunch already grated. It was perfect. I chose not to add any seasoning, wanting the cheese's flavor to come out. Super easy and loved by everyone who tasted it!

Red Lentil Curry

Great recipe. I used red curry paste and omitted the chili powder, just enough spice. It's a bit more soupy than I would prefer, but next time I'll just shorten the cook time on the lentils. I also added a handful of fresh cilantro, it was a perfect additional taste!

Garlicky Baked Butternut Squash

This was fantastic! I also doubled the amount of garlic and added half of a chopped onion. I also added the Parmesan at the beginning and sprinkled more on top when it came out of the oven. I will make this all the time!

Indian Eggplant - Bhurtha

Much easier than I expected it to be. Also, my boyfriend is not really a fan of indian food, but he loved this. I also replaced the cayenne pepper with curry powder and increased the amount of fresh ginger. It was just spicy enough. I also left the onions still a bit crisp for added texture. We will definitely use this one again!

Szechuan Spicy Eggplant

I found this recipe quite bland. I was pretty disappointed as I am a HUGE eggplant fan. But, my sister, for whom I made this recipe, was impressed. I used seasoned tofu instead of any meat and added Kecap Manis at the end for a bit more flavor.
