Apple, Carrot, Or Zucchini Cake
Great cake! Very thick batter until I added the grated fruit/veggies. I used about 1/2 apple, 1/2 carrot. Topped it with cream cheese frosting (made from this site). Split into 2 8" squares (was sharing 1 cake w/a friend) and had some for us too! Yummy!

Sausage and Egg Casserole
Very good. I used egg beaters and "gimme lean" (soy meat subsitute) and it was very good. Good low-fat option to the Jimmy Dean type of product and difficult to tell difference in this kind of recipe.

Frosted Banana Bars
These are great! I got many compliments. Makes a nice large batch for a crowd. Used my own cream cheese frosting recipe.
