About this Cook
I work for Verizon Wireless, am an army wife, run a small press e-zine called Pocket Change @ CourtneyRaedio.com. I also love animals, unicorns, books OF ALL KINDS, watching movies with my wonderful Husband and our four pets (Roscoe, Charlotte, Honey and Daisy). I spend most of my time these days running around in my convertible (favorite car EVER:) and wondering where we're going to end up next. Oh yes, and we've been trying to conceive for over a year, so send me baby dust along with those recipes! :)
My favorite things to cook
Banana Bread with Chocolate Chips
My favorite family cooking traditions
My family never really had any, but I'm big on starting traditions. So I plan on making my own.
My cooking triumphs
A DELICIOUS seven layer pumpkin chocolate cheesecake- I made for Thanksgiving three years ago.
My cooking tragedies
Pretty much everything I made my first six months of cooking...

Chicken Enchiladas V
I used this recipe EXACTLY, but threw two cans of red canned enchilada sauce on top. I swear on the food bible that these were the best enchiladas I had ever eaten. OMG DELICIOUS!

Big Soft Ginger Cookies
Very delicious. These were gone in ONE NIGHT with my book club. The only reason I gave it four stars was because they look NOTHING like the picture, so I was constantly freaked out. The taste however was FIVE stars.

Strawberry Pretzel Salad
My favorite dessert of ALL FREAKIN' TIME! I made this version and it's just like my Aunt used to make. It's a beautiful dessert and people will be impressed, even though it's not that difficult ;)
