I work for Verizon Wireless, am an army wife, run a small press e-zine called Pocket Change @ CourtneyRaedio.com. I also love animals, unicorns, books OF ALL KINDS, watching movies with my wonderful Husband and our four pets (Roscoe, Charlotte, Honey and Daisy). I spend most of my time these days running around in my convertible (favorite car EVER:) and wondering where we're going to end up next. Oh yes, and we've been trying to conceive for over a year, so send me baby dust along with those recipes! :)

Caramel Apple Pork Chops
Yum Yum! I didn't change this recipe much, except for to double up on the sauce and add half of a chopped onion to it. I also added some apple cider vinigar. My husband ate three portions! He thought it was delicious and so did I! Thanks for the recipe! ( BY THE WAY- Fast and Easy too!)

Deluxe Mashed Potatoes
I don't know how anybody could think these were bland. ummm they were DELICIOUS! Five stars all the way. I doubled the recipe and ended up having lots of delicious left-overs.

Ham with Pineapple
Good ham! I didn't give it five stars because I think I liked the mustard and brown sugar glaze I tried last week better. HOWEVER, this was a very delicious recipe. Make sure you keep basting away. I added a little more brown sugar and used diet 7 up for the soda. I must say the presentation was beautiful. Lots of compliments!
