Fudge Puddles

Reviewed: Aug. 20, 2009
These are great! I used cupcake/muffin pans and they came out to be a great size. I doubled the cookie part and still had fudge leftover at the end, so doubling that is a must. Instead of pecans, I garnished with toffee bits. These were a huge hit.

Clone of a Cinnabon

Reviewed: Jul. 12, 2009
Awesome! This is my first time working with bread dough - never even made a loaf of bread before and it was so easy - everything turned out perfectly. I don't have a bread machine, so I followed one reviewer's suggestion of dissolving a packet of dry active yeast in the warm milk, then adding the other ingredients, kneading by hand, and letting rise in an oven that was heated to 200, then turned off before putting the ball of dough in. Covered it with a moist paper towel and waited for it to double in size, about an hour. I started baking them at 400 and after 10 minutes they were getting too dark and the middles seemed to be doughy still, so reduced heat to 350 and covered them with foil, baked another 5 minutes. Next time I will bake them at 350 for 20 minutes. I doubled the icing as suggested by some reviewers, but had half left, so won't do that again. Great recipe!

Tiramisu Toffee Dessert

Reviewed: Jul. 12, 2009
This was great! Super easy. Used 2 regular sized Heath candy bars and should have had 3 or 4. The creamy part of the dessert made much more than I needed. Could have probably used a couple pound cakes and still had enough of the creamy filling. Served this to my girlfriends at a music in the park event and it was a huge hit.

Hash Brown Quiche

Reviewed: Jul. 12, 2009
This was great and EASY! I used hashbrown patties for the crust (like the ones you get at McDonald's). Worked great since I used a square dish. Then used 6 eggs and 1 cup of milk. Added green onions and spicy sausage to the egg mixture. Cooked completely, then added shredded cheddar to the top and broiled for about a minute to melt the cheese. Served it for brunch with my friends and everyone loved it.

Fish Tacos

Reviewed: Jun. 18, 2009
These were great - very refreshing! I had some frozen "beer battered cod" (already prepared product) in my freezer, so that wasn't as good - would have been better if I had hand battered it. Added cilantro to the tacos before serving. Used leftover sauce to make the tacos with grilled chicken the next day and was good with that too. Great recipe, will definitely make again.

Red River Beef Stroganoff

Reviewed: May 4, 2009
This was good, but seemed to be a bit runny. Was great leftovers because the sauce thickened in the fridge over night.

Black Bean and Corn Quesadillas

Reviewed: May 4, 2009
Made recipe exactly except added chicken as well. Was really good, but seemed like it needed something. I think adding tomatoes in addition to the salsa would be a good choice. Served it with salsa and sour cream . Was a healthy dinner for us.

Asian Beef with Snow Peas

Reviewed: May 4, 2009
This was really great! I also added red peppers to my mix and I'm sure all veggies would taste great. I didn't have any rice vinegar, so I just left it out and it tasted fine. I also added a bit of honey to my sauce. Served over brown rice and it was a big hit at my house. Thanks for the great recipe!

Quick and Easy Alfredo Sauce

Reviewed: Feb. 2, 2009
This was great! I added broccoli and scallops to the sauce. I also used a 3 cheese blend, which I probably wouldn't do again - I would just stick with parmesan. I also used minced garlic instead of the garlic powder. Definitely be using this as my "go to" alfredo sauce from now on.

BLT Dip

Reviewed: Feb. 1, 2009
I took some suggestions from other reviews and used 4 oz. cream cheese, 1 cup sour cream, and 1 cup mayo. Then added half packet of ranch dip mix. Chopped bacon before cooking, then put on foil-lined cookie sheet and cooked it in oven, worked out well this way. Chopped even finer after it cooled. Added bacon and onion powder to the mix. Good with or without adding the tomatoes. Stored in refrigerator overnight. Served with Toppers multi-grain crackers. Everyone liked it.

We really liked this and would make it again. I added chicken to it. Next time, I think I would cut back on the vinegar though.

I followed the recipe exactly. I thought these were good, very simple, but I like a more robust, flavorful sauce. Seemed too plain for me.

Shrimp Scampi V

My hubby and I liked this recipe. I did half butter and half olive oil, did 1/2 cup wine and 1/2 cup broth, then added red pepper flakes for a little heat.

Anna's Chocolate Chip Cookies

Reviewed: Jan. 15, 2009
I should not have made these....now I can't stop eating them! Made them just as recipe says, but used a 1/2 tsp salt, as someone had suggested and melted the butter as someone also suggested. Baked them at 325 for 10 min and they turned out really great - a chewy, somewhat cake-like texture for those of us that like them that way. I added little mini M&M's to mine instead of chocolate chips. Yummm!
