Chicken Enchiladas I

READ REVIEWS to tailor to your taste. This is an excellent recipe without too many changes. The only thing I changed was omitted the 1/2 cup water (not needed and takes away from the flavour) and added cut black olives to the top. I used "La Victoria" brand taco sauce which tastes authentic and is a bit thicker than other brands and corn tortillas which were absolutely key to the taste. (If they crack and break as you are assembling just go with it, it comes out as a lovely lasagna type dish) Thank you for the recipe

Nutty Apple Crisp

Read through the other recipes and used 2 cups oats and 1/4 cup flour. I added over a cup of nuts (almonds and pecans) that i chopped coarsely which absolutely MADE this recipe. It was too sweet for my preference so next time i will cut the sugar slightly. It was incredible as a rhubarb crisp! Thank you for the recipe.

Mom's Sushi Rice

I made according to directions minus the konbu dried kelp and it turned out fabulous. The secret is to follow the instructions carefully-let the rice sit/dry completely etc. (do not mess with it too much) ALSO: When adding the rice vinegar mixture do not mix it in but kneed with very few strokes just until combined so the rice grains keep their integrity and do not become soft and paste like. I highly recommend this recipe...thank you for posting!

Best Big, Fat, Chewy Chocolate Chip Cookie

I followed "Chef Joy Dec. 10,08" review and the cookies came out fabulous. I really recommend refrigerating before baking. Great recipe if you want to make larger sized cookies.

Irish Soda Bread

My first attempt at bread, I made by hand and it turned out well. Several changes: 1. rather than 3cup raisins, and instead did 1 cup pecan pieces, 1 cup golden raisins, and 1 cup cranberries (made a for a great colour) 2. rather than 4 cups white flour i did 3 cups and 1 cup whole wheat (ran out of white but it turned out fine)

Moroccan Lentil Soup

Great soup, very nice spicy/sweet flavour. Changes: -I did not have any kidney, garbanzo or cannelli beans so i used a 28oz. can of hominy turned out fabulous as when it was blended it added a good hearty texture. -needs salt/pepper

Best Chocolate Chip Cookies

Perfect! changes: -decreased choco. chips to 1 cup -per other suggestions, baked at 325 for 10 min -used pecans rather than walnuts as they are slightly sweeter Note: -made batch of 24 and froze 1/2 the dough for quick home baked snack!

Bird Seed Energy Bars

I omitted oil and replaced with 1 cup of applesauce. It was really dry and tough but a good base taste...next time will try 1/2 cup oil and 3/4 cup applesauce. I rate it a 4 star because i think my error was the problem.

Spinach and Leek White Bean Soup

EXCELLENT! This is such a fabulous, hearty and rich soup without all the cream of other recipes. I followed the ingredients exactly with 2 changes; a little secret i learned from cooking indian food--i added the cumin and bay leaf to the leek/garlic and sauteed altogether to release the flavour and i cooked the beans for awhile in the soup prior to adding spinach. Using my wooden spoon, after about 30 minutes i crushed half of the beans to add to the thickness. I really recommend this recipe.

Chicken Tikka Masala

I love authentic indian food, and this definitely comes close. I made according to the directions, except for 3 things; 1. i added a can of chickpeas at the very end, 2. I did not have cayenne pepper so it was not as spicy as i would have liked, 2. i added 15oz of tomato sauce and 3/4 cup heavy cream. The sauce still came out very thick and with great flavor. Next time i will try substituting yogurt for cream to cut the fat and add ground cashews to the sauce to keep the thickness. Excellent recipe!

Gobble Up Granola Snacks

Excellent! Based on other reviews, I increased the PB and honey from 1/2 cup to 2/3 cup but left the brown sugar at 1/2 cup. I used a good quality creamed honey and 100% PB. My biggest tip is rather than using rice krisps I used KASHI brand "7 whole grain honey puffs" which added more texture and variety. To finish I added sliced almonds, roasted/salted cashews and flax seeds. I still found the recipe a bit sweet so next time I might use less honey/brown sugar.

Red Enchilada Sauce

What got me intrigued by this recipe is that it seemed like a more healthy alternative to enchiladas that are often loaded with sour cream and cheese. I made the recipe according to the directions, with 2 changes: 1. I doubled the recipe (and was very glad i did) and 2. I was concerned about other reviews that it tasted too italian, so omitted the parsley and basil (but kept the oregano). I cooked it for about 4 hrs. to blend flavours and it came out fabulous. I put a small amount of sauce in each tortilla prior to rolling to ensure the recipe was not too dry. I would definitely make this again.
