About this Cook
I'm a busy lady w/ work, pets, and a boyfriend who loves to try my cooking! I enjoy being with friends as well as taking some time to just enjoy my pets, read, cook, etc. I am also hosting my first foster dog, who is a wonderful, sweet girl. We've been attending casual wine tastings the past few years and I have really learned a lot! If you find it pretentious, try different tastings until you find a group of people & hosts that are informative without any snobbery. It's fun! We've made friends with a great couple from the tastings as well. This year, we expanded our small garden to include cauliflower, zucchini, and corn. They didn't survive but we got a lot of roma tomatoes, herbs, and peppers.
My favorite things to cook
I love all baking--especially at Christmastime. I host a cookie baking day and exchange each year at Christmas. I enjoy making homemade meat pasta sauce, chili, chicken & rice soup, meatloaf, baked asparagus parmesan, and lots of veggie dishes. I'm also a fan of the crockpot. Some of my favorite veggie dishes are sauteed spincach w/ garlic, feta, & lemon and blanched broccolini w/ proscuitto and mustard sauce as well as Jasmine's Brussels Sprouts from this site - made with 1/2 the olive oil and I substitute bacon at times. Sometimes we enjoy the Brussels Sprouts recipe as a main meal.
My favorite family cooking traditions
My dad's family is mostly Polish & Bohemian and I make Kolacky every Christmas and Easter as a special tradition. I also make the Eggnog Pie from this site every Christmas. My mom's family originates from the South and I also enjoy making Southern food--especially chicken & country-style green beans, and (white)Sausage Gravy and Biscuits.
My cooking triumphs
I make great, juicy roasted turkey and great gravy from the drippings mixed with the roasted vegetables I put in the roaster with the turkey. Enjoy that with some veggies and the day-before mashed potato recipe from this site. Finish off with Dutch Apple Oatmeal Streusel pie from this site as well! So yummy!
My cooking tragedies
One time, I feel asleep while boiling water for pasta...it boiled away and I burned up my pot. All before I woke up!

Downeast Maine Pumpkin Bread
I always love to make this bread. It fills the house with a wonderful aroma. I do substitute one cup packed brown sugar in addition to 2 cups of white sugar. I bake two loaves in 8x4 in. pans. I also add an extra 1/3 to 1/2 cup of pureed pumpkin because we love that flavor. This has been requested by several coworkers and family, so I know it's well-loved. I'm taking 2 loaves into the work potluck tomorrow with some whipped cream cheese.

Brown Sugar Cream Cheese Frosting
Fantastic frosting! This is a nice texture- creamy and easy to spread. I think the vanilla and almond flavors shine through but the brown sugar doesn't as much. I may try using dark brown sugar next time. This tastes great on spice, pumpkin, or applesauce cake. I think this would make an interesting change of pace for a sugar cookie frosting as well or for banana bars. Great recipe! Definite keeper.

Butterscotch Spice Cake
We really loved this cake once I tweaked it. It's a basic recipe really. I poured in half the batter and added 2/3 cup butterscotch chips to it (so they wouldn't all end up on the bottom if I mixed them in before) then topped with the rest of the batter. You may have good results mixing them throughout; my batter seemed a little thin. I also made a butterscotch glaze for the top. I would also recommend trying a caramel or maple icing with this. It's great with the addition of chips and icing and goes well with coffee. The boyfriend liked it with the blend of spice and butterscotch. I could see that walnuts or pecans might be a nice addition. This cake also freezes well (well-wrapped) glaze and all. If I frosted it, I may wait to frost it after it had dethawed.
