About this Cook
I have been cooking for 30+ years. I really enjoy cooking especially when I am feeling overwhelmed or stressed. It relaxes me very much. I love to try new recipes. I have found many recipes from this site. My mom always loved to cook and she passed it on to me and in return I have passed the cooking bug on to my twin daughters. I am married and the mother of two grown twin daughters. We just recently moved to Florida and we love it here. I enjoy reading a good book, listening to music and relaxing in my pool with a cold beverage.
My favorite things to cook
I love to cook italian food because that is my favorite food. I also just like cooking good old southern meat and potatoes. My husband is a meat and potatoes type of guy. I am not a good baker because you have to be very precise when you bake. I like to add alittle bit of this and alittle bit of that. I like to tweak recipes to make them my own.
My favorite family cooking traditions
My favorite family cooking traditions are just cooking wonderful meals for my family. Everyone always comes to my house for the holiday meal. I basically like to cook the same dinner for Thanksgiving, Christmas and Easter but once in awile I like to try a new dish. Most of the time it is a hit. I like to practice new recipes on my husband and he really doesn't mind too much. Cooking to me means spending time with family and friends. Cooking is a labor of love.
My cooking tragedies
I was only about 19 at the time and I was making a meatloaf for my husband. The recipe called for 1/4 can of tomato soup. Well, being a very inexperienced cook I added the whole can of soup. Needless to say, the meatloaf was not too good and very watery. My ex husband laughs about it to this day. He calls it my famous "meatloaf soup".

High Temperature Eye-of-Round Roast
Very tender and juicy roast. Next time I will probably leave roast in oven about 5 more minutes. My roast was 2.25 lbs and I cooked for 16 minutes. I served with roasted potatoes and with the drippings I made au jus gravy using 2 cups water and 2 tsp better then bouillon. Made french dip sandwiches with the roast beef. Had my husband slice the meat super thin using our meat slicer.

Spaghetti Pizza Lasagna
This recipe was delish!!! The only changes I made was I added alittle more sauce and instead of cheddar cheese I used a mixture of mozzarella and provolone. I also sauted an onion with the ground beef and added some fresh garlic

Roast Sticky Chicken-Rotisserie Style
This chicken was fabulous!!! I did melt some butter and put on the chicken before I put on the spices. I added a lemon and some fresh rosemary to the cavity. I could marinate for about 3 hours and I cooked it for 5 hours. It was a 5 lb chicken. I increased the temp to 300 for the last 30 minutes. It was so pretty we didn't want to eat it. It was also very tender and juicy. I will definately roast my chickens like this from now on. I also added about 1 cup of chicken boullon to the pan and the last 2 hours I added some baby carrots.....
