Sizzling Chicken Skewers

Grilled Asparagus

Like many other reviewers, I also marinated the asparagus in EVOO, balsamic vinegar, fresh ground pepper, minced garlic, and a dash of salt - but only for about an hour. Threw it on the grill until tender (but not limp) and then finished it off with some freshly grated parmesan cheese. Perfecto!

Grilled Filet Mignon with Gorgonzola Cream Sauce

I followed this recipe EXACTLY (for 2 servings) and it absolutely delicious. My boyfriend told me this dish was "restaurant" quality. I served this with grilled asparagus and that was plenty. The Gorgonzola cream sauce is very rich, so the asparagus was the perfect compliment. The only thing I would change would be to cut the sauce ingredients in half. It only takes a small amount for each filet, so it was a shame to throw out what wasn't used.

Sweet and Sour Meatballs (Suan T'ien Niu Jou Po Lo La Tzu)

This is an awesome Sweet and Sour Meatball recipe! After reading many of the reviews, I did double the sauce. I made the meatballs as is but I did add about 1/4 cup of bread crumbs, a few splashes of Worcestershire sauce, and more than a pinch of fresh ground pepper. I also baked the meatballs in the oven at 375 degrees for 30 minutes. For the sauce, I doubled everything across the board except for the pineapple juice. I used a large can of pineapple tidbits which yielded 1 cup of juice, so I just added filtered water to make 2 cups of juice. As suggested in another review, instead of using all white sugar, I used half brown sugar and half organic evaporated cane juice sugar (because that's all I had, but regular sugar would be just fine.) Delish!! I will be making this one again!

Swedish Meatballs I

I follow this recipe to the letter, but unfortunately, I really didn't care for it. I understand that everyone's tastes are different, but I found that this particular recipe was pretty bland. I thought about adding some seasoning to the meatballs, but I since this was my first time trying it out, I followed it exactly thinking the soup would help with the flavor. That didn't really happen. My boyfriend and I only took a couple of bites and decided it wasn't for us.

Pumpkin Cheesecake II

I tried this recipe for our Thanksgiving feast and followed it to the letter. This was my second attempt at making cheesecake and it turned out great! The ONLY thing that I wish I had done differently was how I baked it. I read through many cheesecake reviews and found that someone suggested using a plastic roasting bag for the water bath to prevent water leaking in. I used foil and I think some of the water leaked through, but it didn't really affect the cheesecake that much. It might have made the crust a bit soggy, but the cheesecake itself was so good, so it really didn't matter. After baking for the recommended 50 to 55 minutes, I just turned the oven off and left it for about 2 hours. After that I transferred it to the fridge. No cracks! It actually looked like a professionally baked cheesecake! The texture is smooth and creamy - and very rich. This one is a keeper for sure!

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I followed this recipe for the most part and it turned out GREAT! I did end up having to finish off the pork chops in the oven, but that's only because I had really thick pork chops. My boyfriend was impressed as well - and he is the pickiest eater I know. I will definitely be making this again, and again...
